Inspired by the request, Surjya Modak envisioned an extraordinary sweet—a delicate sandesh with fragrant syrup hidden inside. The concept seemed nearly impossible. Sandesh is known for its soft texture, and incorporating liquid within it without breaking the outer shell required remarkable skill and innovation.

After numerous experiments and relentless dedication, Surjya Modak achieved what many believed could not be done. The result was a soft, elegant sweet that released a burst of delicious syrup with every bite. Thus, the legendary Jalbhara Sandesh was born, becoming one of Bengal’s most celebrated culinary creations.

Over the years, the sweet earned admiration from some of India’s most renowned personalities, including Satyajit Ray, Uttam Kumar, Soumitra Chatterjee, and Pahari Sanyal, further cementing its iconic status.
